WinemakingVinification takes place with gentle pressing via pneumatic presses and static decanting of the must. Fermentation at controlled temperature (17-19°C) is carried out with selected yeasts. The wine is refermented for at least 30 days. Sparkling process in autoclave with Martinotti method for at least 30 days.
Other curiosities

The colour is pale straw yellow with fine bubbles. At taste and nose has fruity fragrances, intense hints of apple and pear repeated on the palate and enhanced with the dense pelage.
